      several brisket awards under my belt and I cook mine to 190 pull it off and let it sit in the foil for a FULL 2 hours. The last step is critical!

        What kind of thermometer do y'all use? Do they make thermometers that you can stick in the meat and leave?

          just go get a 10$ digital instant read thermometer from walmart. they are plenty good for checking temps!
