Made some pinto beans this weekend, and they were really good, but have about 3 cups left over. Anyone have some good meal recipes that use pinto beans? We had red beans and rice last week, so I'd rather not go that route. Thanks in advance!

We use them in what we call 'chili beans'.
Brown some hamburger meat and season it with alot of chili powder, some garlic powder, salt, pepper and paprika. Cut up an onion and add it in as it browns cooking it until it is translucent. Dip off all the grease. We use alot of meat, it is probably about 1/2 and 1/2 beans and meat.
You need to limit the amount of liquid in it. Usually we do this on the third day of eating a pot of beans and the bean juice is pretty thick. That is OK. You just don't want a bunch of watery bean juice in it.
Add your beans when the meat is done and continue to cook until the beans are hot and they get real thick.
Serve it over cornbread or white bread. I like to dice up some onion and jalapeno on top of it.
