    What do you do with leftover pinto beans?

    Made some pinto beans this weekend, and they were really good, but have about 3 cups left over. Anyone have some good meal recipes that use pinto beans? We had red beans and rice last week, so I'd rather not go that route. Thanks in advance!

    Don't guess I've ever had leftover pinto beans to cook. I cook the whole sack, and then just keep eatin' 'em 'til they're gone. Always better the 2nd day anyway.

      Just make some cornbread and pour them over it..

        I guess I'm looking for things the wife would want to eat also. She gets a little tired of plain beans after a couple days.

          or an old fave of mine from waaaay back in the babysitter days..slice of white bread, put some pintos and juice on top, top that off with a slice of velveeta, either nuke for a bit or just put some hot beans/juice on top....man that is good...

          or you can save them for some breakfast tacos...put them in a pan and mash them up, scramble a couple eggs in the beans, yes, in the beans, sprinkle in some cumino....and some leftover fries or hash browns....mmmmm

            i generally don't make plain beans in the first place. either way, make a batch of refried beans. mash them up. pour very hot grease/lard/oil, and put some chopped onions and grated cheese. it beats heck out ofcanned.

                When I was growing up, Mom would make beans and we'd eat for three meals. Beans the first night, put the leftovers (little or no juice) into a pot of chili second night, use leftover chili for Frito Pie third night.

                    Make some mashed taters, cornbread, corn on the cob (roasted) big ole venison steak batter dipped and deep fried. glass of sweet iced tea. some kind of pie for desert to go with the beans that should take care of the problem

                      We use them in what we call 'chili beans'.

                      Brown some hamburger meat and season it with alot of chili powder, some garlic powder, salt, pepper and paprika. Cut up an onion and add it in as it browns cooking it until it is translucent. Dip off all the grease. We use alot of meat, it is probably about 1/2 and 1/2 beans and meat.

                      You need to limit the amount of liquid in it. Usually we do this on the third day of eating a pot of beans and the bean juice is pretty thick. That is OK. You just don't want a bunch of watery bean juice in it.

                      Add your beans when the meat is done and continue to cook until the beans are hot and they get real thick.

                      Serve it over cornbread or white bread. I like to dice up some onion and jalapeno on top of it.

                              Put them in a pot and mash them with a potato masher then fry three eggs over easy ,bacon or sausage your choice and some hot sauce use corn tortillas to sop up the good ness. Thats my fav breakfeast.
