Been doing it this way for two years now after getting a dehydrator as a wedding gift from Buzzbait.
Cut meat in 1/4" strips and marinate them for 24 hrs.
Marinate consists of 1 cup soy sauce, 4oz liquid smoke, and 4oz worstershire. (for 5lbs meat)
Place strips on dehydrator rack and sprinkle with course ground black pepper and any other spices. Let it go at 155 degrees for 10 hrs.
