Are you stopping framing at 8 feet and then putting in a ceiling?
I have cathedral ceilings in my living and family rooms and while the square footage is not increased, it makes the rooms feel much larger.

The bedrooms and bathroom will be 8 ft ceilings, and the ktichen and living room will 12 ft ceilings.
