          But, I like dem point sliced too long as you switch directions before slicing... Brisket goes both ways!!

                I prefer a nice tender juicy slice of the flat. I'll slice the the point too (correct direction) but if I picking from a pile or asked at a BBQ joint what I want, I'm asking for the flat or "the lean" as most call it..

                  I’m just curious- why would it not be ok to cook it separately?

                  Cook the darn meat. Grill it, smoke it, cube it, smother it, turn it to jerky.
