Man chopping up good brisket is like watching someone pour coca cola into a glass of 15 year Scotch.

Thanks fellas for the good words. I tell my wife its a labor of love....mostly labor.....with a sprinkle of love mixed in. Although in these large quantities, the love dissipates the longer the days stack up. lol.

I love me a good chopped brisket taco and sandwich!! Now at a BBQ joint, it is sliced all day every day!

Hahahah.....thanks Mike. I still haven't made the jump. With this house remodel still on going and in the last stages (hopefully), I still haven't taken the time. I sure love my stick burner but the walking out feeding the wood while working over several days is a PITA and makes me think, I at least need one for my personal 1-2 piece of meat cooks.

I have to switch off. Right hand vertical chop, left hand horizontal chop. Next pile...

                    Y'all got it all wrong.

                    Excellant work Jason.

There is no finer meal on earth thsn bbq tex mex fusion.

That chopped brisket makes the finest tacos on earth. Paired with a pot of borracho beans and fresh slasa. It doesn't get any better.

Next day it goes in the eggs for the best breakfast tacos ever.

Great job Jason. Looks good enough to eat.

That meat’s been whacked like a Friday night hate thread.

Mouth watering! I remember when I was poor...but could still afford a brisket. Now I have decent money, but can't afford one.
