          Legg No. 10 is very close to jimmy dean. We add a little sage to it.

            I have tried a bunch of them. This year High Mountain breakfast is what I have made about 100 pounds of out of hogs. I just made about 30# this morning. With pan sausage grind enough for a sample cook and add fat as needed. It’s easy to be too dry

                Spread out meat 2 inches think. Cover white with salt then black with pepper. Add red pepper to taste. Mix again and fry up some to taste. My dad and uncles use to make it that way.

                  Based on this thread I ordered some Leggs #10 sausage seasoning for 25lbs of meat. I had a gallon bag of frozen deer cubed up and another one about 3/4 full of cubed up wild hog. I figured I had a total of about 13lbs or so. I went and bought a 10lb boneless pork butt and cubed it up and mixed everything together and put about half the bag of seasoning in it and ran it through the largest cut on my 1000 watt grinder, mixed up again and mixed the rest of the seasoning with ice cold water and poured it in and then probably a half cup of red pepper flakes. Ran it through the grinder again and fried up some patties and man it is goood. I’m a fan now. Thanks for the inspiration.

                      Fiesta has a good breakfast sausage seasoning. I use Fiesta, Old Plantation, and Ragin Blaze breakfast sausage seasoning. All three are good.

                                I use REO Spice! #3, #8, #109 if you like it spicy. They have a lot of Good stuff!
