I have a question about the trimming that closely.

Would it help the brisket if a rack was above the brisket with the fat on it while cooking to drip onto the meat?

This would allow the 360 smoke ring and fat basting.

Or is this a complete waste of time?

Good question.

I make tallow from the trimmings and at 165 when I wrap, I cover the paper in tallow. I already had enough tallow from the last brisket, so I melted some I already had and put it on the butcher paper I used to wrap, then took 3 golf ball sized chucnks of room temp tallow and placed it on the top of the brisket. I then quickly wrapped it up tight and let it smoke until 204 IT.
