I've been processing mine for a long time. The key is having good equipment so it doesn't take all day and become a chore rather than a good time. Big, powerful grinder for me is a key along with sharp knives, tubs and a bag sealer thingy for burger. I also have a sausage stuffer in my arsenal that I love but only wish it was a lot bigger.
