    Grilled Squash

    Going to grill some squash tomorrow for dinner. Anyone got a different way of doing it than patting with butter and seasoning and rolling in foil??

    You can stick them on skews and add some other vegs too

      Jason, I put a little zesty italian dressing in with it also, I do a bunch of different veggies together, mushrooms, zuccini, asparagas, onions, along with sqash and have to make extra because it doesn't last long

        Just throw 'em in a pan with some olive oil and your favorite seasoning (garlic, onion bits, etc.). A little Italian dressing mentioned above is a great idea.

        I know this sounds too simple to be good, but it's great eating!

          Slice about 1/2 inch thick, on a bias. Toss with canola oil (very little oil), salt, pepper, grill. Works well with butternut squash, too.

          May want to add a little worchestershire (sp?) sauce, too.

            2 yellow summer squash, quartered lengthwise
            2 zucchini, quartered lengthwise
            2 red onions, cut into 3/4 inch slices
            3 tablespoons olive oil
            1 clove garlic, minced
            1/2 teaspoon red pepper flakes, crushed
            1/2 teaspoon salt
            1/2 teaspoon dried rosemary, crushed
            Preparation:
            Combine olive oil, salt, rosemary, garlic, and red pepper in a small mixing bowl. Brush squash, zucchini, and onions with mixture. Preheat grill for high heat. Place vegetables on grill rack and reduce heat to medium high. Cover and grill for 5-7 minutes. Serve warm.

              I like to cube yellow squash, put them on a skewer with chunky red onions, cherry (or grape) tomatoes, mushrooms, cubed zucchini, and bell peppers.

              Then I take a blender, chop up 5 garlic cloves, 1 TB of oregano, 1 TB of rosemary, salt, pepper, red pepper flakes, and olive oil, (bout a cup - cup and a half). Blend it up, let it sit for a while. Baste the skewers with the olive oil mixture and whatever you don't use, you can easily save and it is good to eat on lots of stuff.

                  I cut them lengthwise about 3/8 to 1/2" thick, put them in a ziplock with some olive oil, dried italian herbs and tony's, roll them around till they are evenly coated and then cook them right on the grill. It's not grilled squash without grill marks.

                    And it is better to blend the olive oil and let it sit.

                              Steam it, and top it off lightly w/Sea Salt. If you want some added flavor, instead of a little natural flavor, forget the Sea Salt, and go with Tony Chacheries (sp) instead....
