          The IBCA sanctioned cook offs will provide their own judges.
          Smaller cook offs and non IBCA sanctioned cook offs will get volunteers to do it. If you want to be a judge, you usually can just ask the chairman if they have enough judges lined up.

              I’ve made 2 batches of Glen’s recipe. I had to back way off in the amount of liquid smoke. Maybe the stuff I used was more concentrated but it was so heavy in the first batch that I poured it out.

              Cut in half last time and it was better but still stronger than I like.

                Did you use hickory or mesquite liquid smoke?
                I learned the hard way that the mesquite has a little stronger taste and also seemed to have a bitter aftertaste. I only use hickory now.
