I've eaten 5 year old venison, had to cut off the outer layer, was a little oxidized but it was perfect under that.

This would be my thought - if done properly, you should be good to go. Add a little smell test, just for kicks.

I have eaten 3 year old deer meat wrapped in butcher paper, 2 year sealed will be fine. I normally eat it within a year, spending money on vaccum bags is a waste to me. I wrap it in butcher paper
