Bacteria require water and oxygen to grow (aerobic bacteria). Jerky is stable longer because of reduced moisture level.

I wouldn’t feed it to my dog either.

The wife bought some brisket Monday and just found it in the bottom of one of her Christmas bags. It is tightly wrapped in Saran Wrap and has been in the house at ~65* since.

Since it has been smoked, is it still good or do we need to break down and give $50 of brisket to the dogs?

If I was back in college, I’d give it the smell test and probably eat it. Found a summer sausage tortilla that had been in a hunting pack for 3 weeks with no bad signs.

Would I feed it to my wife and kids a couple days before Christmas? Hell no!
