I frequently flirt with the edge on "aged" refrigerated leftovers, but even I wouldn't eat meat that's been left out for 4 days....unless it's jerky.

So why is smoked jerky ok for weeks? The brisket was smoked too. [emoji2369]

I bet it's fine. I'm also betting you Nancys throw away pizza left out overnight.

You are going to be throwing it one way or another. Whether it's out or up is totally up to you!

Me....I'd pass. They make more brisket.

                BoB,
You know it’s abt moisture content and the fact that brisket doesn’t use cure.

I don't use cure on deer jerky. Left it in a ziplock in the camper for a month eating on it.

Chicken? Man I will eat tacos and nachos from smoked chickens in the fridge for over a week.

Do you use it on beef jerky?

no but rarely make it. No dehydrators. Real slow smoked jerkey.

Bacteria require water and oxygen to grow (aerobic bacteria). Jerky is stable longer because of reduced moisture level.

I wouldn’t feed it to my dog either.
