I was completely impressed with these tenderloin steaks we grilled today from my black bear. If I had to make a comparison, I’d say it had a likeness in texture and taste to a beef flank steak. Always love to eat the kills I am blessed with. The rest will be turned into summer sausage. Anxious to get back to my family in Texas, but have had the time of my life with my great friends here in Oregon. This will be an adventure story I tell my grandchildren and great grandchildren the Good Lord willing!

I was wondering the same thing. Biologist aged it at 6 years old. Those pads have seen some miles!!!
