I shot one with a ton of fat on her a couple of weeks ago. It actually got hard to clean her because my hands and knives got so slick from all of the fat I was dealing with. I cut almost all of the fat off because I have always heard that wild pig fat tastes bad. I cooked a few little pieces of meat and fat up just to see and the fat was very mild in flavor and tasted good...I wish I had saved the rest of the fat for sausage instead of throwing it away!
That is a really fat pig! Also makes it look bigger when your sitting a county above where its laying
