    Venison

    How many of you will not eat venison? How many of you do? If you do not eat the venison what do you do with your harvest? I ask this because I presume most of us on here have and will harvest a deer or such.

    I love it. Fried, grilled etc. I know of others who will not touch it.

      The OP's question asked for those that don't, then goes on to describe that he does eat it, so I am guessing we that eat it can also reply.

      Backstrap and tenderloins yes of course....the rest in sausage, jerky, burger, yes.......

      I am not a big fan of the deer quarter steaks and neither is the wife but we love them in jerky and the rest of the above. I bet, 70% of the deer I bring home goes into jerky and burger.

        I don't do burger, but bacon wrapped 'straps, tenders, dried sausage, buck sticks, and jerky--good. Wife doesn't eat it so I have to eat it all myself.

          I don't like to eat venison steaks at all any more. I only grind with beef fat to make ground for burgers, tacos, etc.

              95% of the deer is ground for me and just the backstraps are cut into fajitas.

                I go through 3-4 deer a year and probably make 75%+ of my diet from wild game but I only eat backstrap and tenderloin "as is",we grind most as that's our preferred source of ground meat. And will have hindquarters one 1-2 cut into jerky.... and some sausage of course

                    The back straps are the only thing I dont have made into some type of sausage or burger grind. I always chicken fry the straps because thats the only way I like them.

                          This, backstraps go to fajita meat. The rest goes to burger. Same for hogs pretty much...backstraps go to fajita and the rest goes to sausage/boudin.

                            I try to make as little burger as possible. Not that it's not good, I just don't eat a ton. Much rather have steaks and roasts.

                            Can't bring myself to chicken fry backstrap. There are plenty of lesser cuts for that!

                              Back straps and tenderloins are the best cuts. Ham steaks are ok if all the silver skin,fat,bones and tendons are removed. Slice those in 1/2 thick and run thru tenderizer. Marinate.
                              I like buck sticks better than jerky and I had some black pepper crusted smoked tenderloin that was very good.
                              Ground meat is good for certain things, but I aint fond of a fried deer burger.
