    How have I never heard of a Tri-Tip??

    I went in to my local butcher shop (Texas Slabs) to buy some steaks this morning and the butcher said he just got some really nice Tri-Tips in. Maybe I've been living under a rock but I had never heard of a Tri-Tip. Decided to give it a try and it was a great decision. I highly recommend!!

      Its a cali thing. Its some where between a eye of round and a brisket. It can be good if cooked and served properly.

      I have done a few. Most are sold on the west coast.

        Tri tip is huge in SoCal. I found out about it a few years ago when I went out there for a desert race. They cook medium rare, and put on a sammich. Yum!

        I've done a few at the house since then, and it always a hit with the family.

          Even though it was my first attempt, I'm a huge fan of them too. We sliced it up and dipped it in a blue cheese/butter sauce. Might be my new go-to for the BGE.

              I've grilled and smoked it. Really prefer to grill it to medium rare temp. Sliced thin with chimichuri, yum.

                    I think it's more of a west coast thing. I grew up with them because the ranch my BIL runs is a major producer of them out of CA and he used to send em to us all the time. Just cooked one of my last couple Tuesday actually and made breakfast burritos with the left overs and eggs today.

                    Done ever cook em last med/med rare otherwise it's ruined

                      How does a ranch become a major producer of one cow part and not the rest?..

                            I should say I assume they sell all cuts. When I've gotten their beef at the store I can only afford tri tip, they're proud of their steaks
