Define "South Texas"

The term is thrown around a lot, and the thread South Texas Deer Lease brought back a thought that has had me wondering for a while. What is South Texas to people? I see hunting shows on TV stating they are hunting in famous South Texas but they are outside of San Antonio or Uvalde. I don't consider that ST. People just love to use those 2 words for some reason.

being someone that has never lived there I consider South Texas anything South of San Antonio as "South Texas". It is not far South of San Antonio that things change to South Texas brush and stay that way
