                Get the internal temp close to where you want it on low temp then put it on high heat to sear the outside

                  Cook in a 200 degree oven until the internal temp is 115 for rare. Use a digital thermometer. Sear in a hot cast iron skillet if you have it. Throw some butter in the skillet and spoon over meat. Use a good thick cut of beef. I have 2" thick steaks cut at the butcher.

                      Ummmm......put in smoker at 200-225 until desired internal temp and then throw on HOT coals (mesquite preferred) to sear.

                      Wives cook in ovens and skillets!

                        Salt and pepper. In the oven on a rack at 275 until internal temp reaches 120, pull it out, let it rest for 15 mins, then sear in a very hot cast iron skillet for 2 mins each side. Then I put a lil butter on top.

                          I like to use the sous vide method, using hot water bath in a sealed bag after seasoning the meat at 110-120 for 2-12 hours, and then using charcoal and some wood for a super hot fire and sear for 1-2 mins per side. Did some for mother's day, and they were awesome!
