I also like the idea of a shipping container camp house. I seems like it would be a little harder to convert than finish out a portable building.

Portable Buildings for Hunting Cabins
Most of you guys using traditional water heater and toilet? I was thinking of an RV toilet just to conserve water supply. We have electricity, but do not have city water. We have a pump and a 1500 gallon tank set up the water. We do have septic hook ups as well which is very nice

We have an old house on the property with a water heater, toilet and bathroom but it's only a claw foot tub. I have an outdoor shower I made from a crate with hot water and cold water from the house plumbed to it. I'd rather shower in my crate than bath in a tub.

I'm planning to dig a 6 inch deep trench around my old gooseneck travel trailer and then underpinning it with some barn tin. One edge down in the trench and the other screwed to the sheet metal part of the underbelly portion of the trailer. I'm thinking that's the ticket to keeping the vermin out.
Won't be pretty but it's an old trailer anyway and should be easy to remove if I want to move the trailer.

You may want to try one simple suggestion before going the new construction route. Lowes, Home Depot or Walmart carry little electric devices which supposedly emit very high frequency noises to keep mice out. I was pretty doubtful at first and mice were terrible in my lease camper. We have year round electricity so I plugged in three of these little things and I have not seen a mouse yet. Before I started using them I would bring mouse traps to camp and set three or four every time I went to camp. Right after turning out the lights to go to sleep, I would hear the "WHAP" after catching one. I did not want to leave the traps set when I was gone because I didn't want to catch one and have it stinking up the place when I returned. These little electronic gizmos are inexpensive and have really worked for me. Some brands even have small night lights on them. Just a suggestion.
