Ok so I have recently gotten into making my own pickles and have done a few batches where i have sterilized the jars and then once the jars are sealed put them in boiling water to process them for shelf storage.
so here are my questions:
1. I want to make cucumber/onion salad and can it. But i season it with a light balsamic. I guess i need to use a pressure cooker? Do i have to have it liquid filled like pickle to get it to keep?
2. I want to make salsa and black bean dips. can i do the boiling water bath or do i ABSOLUTELY need a pressure cooker to preserve it in the cans.
3. anyone done coleslaw and been able to get it to keep. Im open for some recipes in this department as well.
