    Canning Discussion: Looking for some insight

    Ok so I have recently gotten into making my own pickles and have done a few batches where i have sterilized the jars and then once the jars are sealed put them in boiling water to process them for shelf storage.

    so here are my questions:

    1. I want to make cucumber/onion salad and can it. But i season it with a light balsamic. I guess i need to use a pressure cooker? Do i have to have it liquid filled like pickle to get it to keep?

    2. I want to make salsa and black bean dips. can i do the boiling water bath or do i ABSOLUTELY need a pressure cooker to preserve it in the cans.

    3. anyone done coleslaw and been able to get it to keep. Im open for some recipes in this department as well.

    Yes, you need a pressure canner.

    When only making preserves or pickling something, you can get away with using the water bath method, but when dealing with pretty much anything else, you need to use pressure to ensure that the environment (in the jar) doesn't start growing all sorts of funk.

      I thinks you need the pressure cooker. When my mother died, I inherited approx. 10 pressure cookers. She picked them up any time she saw one at a garage sale. She was always canning something

        High acid foods can be water bath canned.

          Been doing a little research myself, wish I had paid attention all those years when my grandmother was alive. But!, I don't know of anything that can't be learned from youtube!
