Knowing anything about how cold air is weighted and moves makes me partial to the efficiencies of a chest freezer. I have a terrible visual of everytime I open an upright all the cold air spilling out and it having to do much more work to restabalize. A chest freezer holds cold air like water in a bucket when you open the lid. If you have any organizational sense you're not going to lose meat in it.

Okay, point taken and duly noted. That being said, my freezer is usually so full that there is really very little air to fall out when the door opens, it's mostly frozen solids in there. Additionally, I don't open the freezer multiple times a day, so it's not like the compressor has to work to cool down what air is in there very often.
It's not my organizational ability that causes stuff to get lost in a deep freeze, it's just that invariably, that piece of meat that I need, will be in the bottom of the stack. And don't get me started on the wife's inability to get meat out without going through the whole darn machine looking for that one perfect steak. The upright just works way better for us, my chest freezer now lives in the garage and is only used for hides, whole pigs etc.

Ive had both. I like the upright for organization. I think you do not loose as much meat. My back also likes the upright.
That being said, it seams like I can get more in my chest freezer and you can get bigger, for cheaper. I try to keep choice cuts in the racks in the top of the freezer. Bought extra racks, so when you open the freezer all you see are the racks. I keep hog, squirrel, rabbit and sausage meat in the bottom. Try to keep it fairly organized. Never fails though when I dig through it, I find some tenderloin or back strap have fallen into the bottom...
Buy biggest what you can afford and have room for.
I also have a drawer in the extra fridge in the house, where I keep ground meat, breakfast and smoked sausage. Things I use a lot more.
