I agree with what many have said.. You are hunting the deer in their homes. If something smells different they will alarm. I've been busted after taking every scent control measure possible and wearing scent lock clothing. The thing I did different that day was pin one of those little dirt smelling wafers to my hat... Just didn't smell right I guess.

If it's a spot you have been corning, don't use it.
If it's a new spot, never been corned, sling corn out, then spray the vanilla around. Then, you will see results.

Never change the smell of something in the deers area. About four years ago buck candy was all the rage, I laced some corn with it and the deer avoided it like the plague. Not knowing that was the issue I hand poured regular corn and the deer literally ate all the regular corn and left the deer candy laced corn alone. I ended up throwing water on the deer candy corn and kicking around to get the stuff off. I have on video a massive buck eating every kernel except the laced ones and he's clearly confused as to whats wrong with them.
Plain corn works just fine.

introduce something new to their feeding, bedding, or travel area and they will be on high alert
kinda like walking into your house and all the furniture is re-arranged ; You would be like "what the heck"and think something happended

If this were true why can I not have a feeder, not go to my lease for a year, put vanilla laced corn on the ground, saturate the area and myself with vanilla and still have over 20 deer inside 10 yds a few hours after I introduce it to the area? Not one deer seemed uncomfortable and on my word nearly all of them came in from down wind.

To the Op, don't fall to the vanilla craze, maybe some have success but higher percentage do not. Use regular corn or persimmons flavored. Stick to whats natural instinct to them that will create a natural draw to bring them in.
