I'll crank the pit for anything. Firing the pit means me on the front porch. Outside with a cold beer. Anything go get outta the house.
Yep. I have a ceramic cooker (egg style) which cooks excellent but takes some of the fun out of it. I miss starting and tending the fire at 4:00am, cracking that first beer before sunup and smelling like mesquite smoke while sitting in church Shopping for another traditional offset firebox stick burner. Wood is cheap.
You need a new smoker, I thought all dedicated wood cooker guys had 1. A personal size 2. A 2 chicken size 3. A brisket, a chicken, and 2 rings of sausage size and 4. And the holy-mother-of all smokers that'll feed the church and half the town on 4th of July size!
Oh yeah. I have an offset stick burner from the good people at Lone Star Grillz in Willis, TX. It's a piece of cake to use, for large and small cooks. I didn't cut, season, and stack all that post oak for nothing.
