    Austin Area Deer Processing

    I was wondering who yall prefer and who yall have as a back as well. Any and all reviews will be helpful. I usually use Midway in Katy but I am not willing to make that drive with the fuel costs.

    Klein Meats is about the best I have tried- I do all of my own except for exotic dried sausages.

      I've used Hudson Brothers before. I was very satisfied with the job they did and the jalapeno and cheese sausage was real good.

          Little drive but there is a little place in Blanco that does an awesome job. Pretty inexpensive as well.

            I generally do my own but Hudson's is good.

              Kleins you will get your deer back- it is a small mom and pop operation ran out of a shop at their house. They are about the only place I would trust as to getting your own deer back.

                I will second Hudson's and Kleins. I use both of them. At Hudson's, the bacon wrapped chop steak is where it's at. That's the main reason I use them, although their Jap & cheese sausage is very good. Klein's does good work also. I used them exclusively until I was introduced to the chop steak. Now it's about half and half.

                      No way in hell you get your own deer sausage back with Hudson's. Fact.

                      The Buck Stops Here in Oakhill uses the same recipe as Hudson's...for everything.

                      I only know of a couple of places in the Austin area that you will get your own deer back. Mike's Barnyard in Liberty Hill and Rays Butcher Block in Wimberley.

                        I had a deer done at Buck Stops Here and thought that guy did a good job. I had forgotten the name of it till Gerald posted it. I really like their jerky and summer sausage.

                          It's under new ownership this year. They are planning on keeping everything the same.

                            The jalapeno/cheese sausage from Hudson's is the best I've ever had, bar none. And I have tried hundred's of different ones. The summer sausage is pretty good too.

                              I really don't mean this as a smartarse question, but how do you for sure that you are getting your deer back from any of them?

                              One instance several years ago where I know for a fact that I did not get my deer back is what got me into doing my own.
