School me on building a smoker

I'm wanting to build a smoker/grill. What are some must haves and the best way to build them? How to you build the baffle between the firebox and cook chamber?

When I buy or build one, I'm gonna go with a reverse flow pit. Can always do steaks on the Weber.

I like the rack idea. I'm thinking of a adjustable baffle to help regulate temp.

I looked into building a reverse flow and found lots of calculators online that helped and on smoking meat forums. In the end I built a smokehouse out of soy glued plywood that can smoke 5 or 6 briskets at one time and ALOT of sausage and jerkey. It uses a propane burner and works very well. I've done lots of chickens, jerky, turkeys, ribs and a few briskets in it. I use the regular grill for steaks and such. Just throwing this idea out there. http://discussions.texasbowhunter.co...d.php?t=246882

X3. I built mine (well, I did welding and mason did stone) and if you can build a stationary one I would recommend this route. Google is your friend! :-). Look at the smoke ring forums.

Have to be careful with Terra cotta.. some of it contains lead.
