I cook cottontails just about any way I cook chicken. My wife's favorite is get Swanson Mexican Tortilla broth and follow directions, I enjoy it too.

I was smoking ribs one day and spotted two rabbits in the yard so I shot em and cleaned em real quick. Put a little dry rub on em and put them on the smoker for about 45minutes then wrapped them in foil with a little butter, peppers and onions and cooked them maybe another hour or so. Turned out better than the ribs

That looks like a winner, as always Blake.

                I'm saving that recipe Blake.

When you get ready to clean one try using this method. I posted this the other day but in case anyone missed it:

As long as we're posting up recipes.

                      Rabbit Pot Pie
                      (Works good for squirrel also)
~ 1 rabbit, cut into serving pieces
                      ~ water
                      ~ vinegar
                      ~ salt and pepper
                      ~ flour
                      ~ 2 medium onions, chopped
                      ~ 2 carrots, diced
                      ~ 3 potatoes, diced
                      ~ 2 Shiitake mushrooms sliced
                      ~ pie crust or biscuits

Soak rabbit in equal parts of water and vinegar overnight.

Remove rabbit from water/vinegar mixture and dry. Season with salt and pepper to taste and roll in flour.

In a stew pot, large skillet or dutch oven, heat a little oil and brown the rabbit quickly on both sides.

Add enough water to cover the rabbit. Cover and simmer for 1 to 1 1/2 hours.

Add the onions, carrots, potatoes and mushrooms. Cover and simmer until carrots are tender.

Thicken the broth with flour to make a gravy. Use 2 tablespoons of flour for each cup of broth.

Pour into a pie crust or make crust with biscuits.

Cook at 375 degrees until the crust is golden brown.

                      Serve and Enjoy!

I'm hip deep in rabbits around my place. I'm gonna try some of these recipes. If the family likes I may have to thin down the population a bit.

I do this. And use butter, Italian dressing, or beer for the juice

Thanks for the suggestions GS, I'm heading to the lease this weekend with the kids to do some rabbit hunting. I will have to try a few of these recipes. I haven't had rabbit in more than 20 years, so I'm looking forward to it.
