I should add that the .35 was waaaaaay too much gun for these little things. If I'd known they were gonna be that small I'd've brought something smaller. My buddy was shooting a .300 Win Mag. This sure wasn't Old Bald Guy's "little guns kill stuff" thread. We went to pick up one of my buddy's deer, and the heart fell out of the exit cavity.

Cooked the axis blackstrap tonight. I was disappointed.
Someone tell me where I went wrong: cleaned within 1 hr after shooting. Straight to ice. 2 days on ice. Marinated for 2 hours with teriyaki, soy, and chopped garlic. Rinsed marinade off and cooked on stove top for 5 mins per side. It's chewy, watery, overcooked, and bland.

Black pepper little garlic and maybe a little uncle chris steak seasoning. I usually do about 3 min per side over a hot fire and I cut the steaks thick. How did you get watery and overcooked at the same time?
