Palo Duro and Caprock Canyon SP were really cool to hike and camp, and they are an easy drive from Dallas area.

We have decided to go to Big Bend the week after Christmas. I want to do the South Rim Trail for sure but what else is a must see ?

there are no bad hikes that time of year. it can be impassable in the chisos if it snows, so have back up hikes. you can start at lajitas and hike to the canyons on the rio grande. great 3 day hike. burro mesa is good. and don't ignore big bend state park either. it is an underused jewel.

Palu Duro is great, but I like Caprock Canyons SP even more.
