Eddies is good. Good friends with the owners of the meat market and taxidermy side. Take a few there because I've known them so long and majority go to granzins in NB. Hard to beat their price, quality, and how quick they get it back to you. Most my taxi work is done by double nickel in NB as well. His pricing and quality is second to none.

Farmers Market in Boerne on Main Street has great sausage (if I have any left over burger from the previous season I take it there and have them do Italian and bratwurst). I use Schotts most, due to proximity (but I know they mix meats for burger). Granzins is great, but NB is too far for me.

Farmers smoked meats and slim jim's are GREAT!! Not fond of their salami or jerky. I have them cut raw jerky meat from the hams and make my own jerky. Costs very little to have them do this. They partner with Hudson's in Austin, who make GREAT sausage and summer sausage. Just tell them you want it from Hudson's and they will take care of transporting. At least they used to do it.
