    Who's BBQin' for Labor Day?

    In about and hour or two gonna fire up the pit and put the briskets on around 6am for a 12hr smoke! I have brisket,ribs and two chickens seasoned up with chuapcabra rub and some home made beer mop! Can't wait can't sleep

              Share some tips! I'm planing on eating around 5 hoping my two get done around 4pm at 260/275* I'm gonna put the meat on around 6 should give me 4 hours on the pit and the rest wrapped and total of 10/11hrs. How do you cook yours? I did a chuapcabra rub and I have a beer mop with the standard viniger,beer,hot sause,woshiner,garlic,water,olive oil....every hour

                I'm kinda in the mood for something different so i'm doing brisket tacos. Rubbed it down with kosher salt, garlic powder, and a good bit of pepper. I'm gonna smoke it for 6-8 hours at 225 and then finish it in a pan in the oven with some jalapeños, onion, cilantro and some rotel. Make some green sauce with tomatillos and avocados and throw it all on a corn tortilla. We'll see what happens haha.

                  Settle down we're not on the cooking channel Paula Dean lmao! Well I feel embarrassed. Sounds good I'm still novice at the BBQ thing so taking it easy, been watching BBQ pitmasters on tv

                    Hahaha shoot I'm no pro. The biggest factor on how my food turns out is my beer intake. There's a fine line between too much and just the right amount. I've crossed that line a time or two haha.
