    I need a recipe for hog backstrap

    My son's visiting from Montana, he invited a buddy from college over tonight (good hunting family!) and my wife was planning on bbq chicken. He's asking if I'll thaw one of the remaining backstraps from last year.

    What's a good recipe for doing the pork backstrap on my (TBH) disc cooker?

      I've never done chicken fried like I've done with venison. Thaw, slice (long way or medallions), pound thin and flour/egg wash/ and then crumbled corn flakes? (I like that better than breadcrumbs)

        Butterfly, stuff with cheese and boudin, the wrap with bacon and through on the grill. There's a thread on the recipes about venison backstrap but it works just as good for pork.

            The crock pot is your friend when it comes to questionably tough meat. I cook all my hog meat that way now and it comes out tender and very tasty. You gotta mix in a lot of good veggies and seasonings too of course.

              My wife 'nixed' the chicken friend idea in favor of stuffing with crabmeat and garlic, and wrapping in bacon. Who's going to complain?

                Cover entire strap in coffee and then grill. You may think I'm crazy but try it.

                    Soak it in vinegar then crock pot like pulled pork with bbq

                        I can eat a lot of things but I have yet to taste a wild hog and say, man that is good. It's usually a shrug of the shoulders with me saying it's ok or spitting it out.

                            Crockpot. Onions, potatoes, carrots, celery, and lipton onion soup mix. Pepper and salt to taste. Mmmmmmm good.
