    Freezing a cooked brisket

    So I'm planning on cooking a brisket tomorrow to take to the Frio with me next weekend. I guess I'll cook it, then let it sit out for a while to cool off, then stick it in the fridge overnight. Then I could either freeze it for a week or just leave it in the fridge. Has anyone tried this before? How did it taste reheated?

    I'm pulling a camper to the river and I don't think the oven is big enough for a brisket, so I'll probably end up reheating it on the pit.

    Cook it

    Let it rest

    Slice

    separate meal size portions and vacuum seal

    freeze

    To reheat:

    Boil a pot of water

    Place vacuum seal bag in boiling water

    10/15 minutes later you have delicious brisket

        If not that method you can add a little water and wrap with foil. Then reheat in the oven. Its just like buying a HEB brisket.

          Slice it first for sure. Warms quicker that way.

              If you slice it before you vacuum seal it, it may dry out the individual slices. As the water boils the meat heats and the juices run out of the slices. I prefer to freeze a chunk and boil it then rest and slice. Just the same as right off the smoker. Just my opinion.

                For what you described I'd second Charles's suggestion. An option for a whole brisket if you've got an oven is to wrap it in plastic wrap once it's rested and cooled and then reheat it in the plastic wrap for 40 minutes at 200 degrees. The plastic wrap is good to at least 250 degrees. If the oven's not big enough or you don't have precise temperature control, this won't work.

                  Like said above. It works great. We always cook 2 at a time and freeze. Great quick meal later on.

                      I have always just frozen mine whole, then thawed and reheated when I wanted to eat it. I always open the foil and add a little water before heating.

                              I like putting em in the fridge for a while before slicing...easier to slice and not as messy. If you vacuum it meal size portions as mentioned above the packages are nice and thin and thaw out much quicker. Wont dry out just warming it up as long as its wrapped and heat aint too high. Hava great trip!
