Axis meat needed

Good Morning,
I have an opportunity to enter a Charity BBQ contest for Texas Association of First Responders(Fire,Police,EMS), here in Houston.
The BBQ team wants me to enter an entry for the Wild Game division.

I thought Axis deer would be an excellent meat to use and was a little different than the usual whitetail deer offerings.

If anybody in the the area or near Houston area has some extra axis deer meat that they can spare or donate to this effort I would appreciate it.

I don't think I have any axis, but I MAY have some buffalo or elk, will have to check when I get home

Thanks for the thought and the offer but I need to stay with cuts of meat like backstrap or hams.

How much do you need? I have ground axis, and backstrap.....might have one or two hind quarter pieces I use for roast. I will double check.

I would think three backstraps worth in weight.
Wanting to cook some of the meat beforehand to perfect the process and maybe tweak the flavorings.
Standing by to hear what may be available.

I can drive aways to pick it up as needed.

Well, I ended up working a third double and I am sorry I didn't have time to look in the freezer, and I have another $#^*@ng double today.........I will look as soon as I am out of my coma tonight (Monday) and let you know what I can give up.

Axis is really good,so is elk but if you could get ahold of some moose meat you are the winner hands down!

If I had more I would offer some but we been going through it like crazy. Even the ground meat we made burgers was crazy good

I would drive up to the Austin area from Tomball to pick some up if anyone had some to donate.

Options for Axis are getting slim. I may have to go with whitetail afterall.
