I have no idea if this is the actual name or not, it's what my FIL calls them. We have a bunch around the pasture and was wondering if their any good to eat.

Anybody ever eat swamp rabbits?

Swamp rabbits are a different species than Cottontails. A young Swamp rabbit is just as good eating as a Cotton Tail. Old ones (whether a cotton tail or swamp) can be rather tough... as my dad used to say, they're like eatin' a rubber doll unless you crock pot them or boil 'em in a pressure cooker first. Hard to beat smothered rabbit. My momma could cook 'em with 'taters 'n onions that made a thick brown gravy... it'd make a bull dog break a trace chain gettin' to the table! Only rabbit I ever tried to eat that was plain awful was a jack rabbit... Tried it twice and that was enough for me.

I take the wife and kids out with spotlight and .410 ever so often to get some. Wife cooks with vegetables in crock pot and makes an awesome stew. Great fun for the whole family and really cool for my 5 year old to get to eat something he harvested. Even the 10 month old ate a whole bowl the other night.

i think the "swamp rabbit" is actually a (hare), i have killed them with my bow while hog hunting at granger lake, they are tasty just like the smaller cottontail cousin, boil and then marinate with zesty italian dressing for an hour, half cup minced garlic, 1/4 cup red onion, 1/2 cup real bacon bits, 1 tbl spoon crushed red pepper, 1tbl spoon lemon and pepper(all this is a rub),...stuff cavity with baby red potatoes..... wrap in foil and put on pit for 30 minutes or in oven at 350...if you like spicy add jalapenos with the potatoes!
