DMo that looks mighty tasty. Couple of things, you blacken that tuna dry? Second, sure would like to know what that concoction is over the fish. I know I see corn.

Wonder if Benny has me a progress report on my rolling base?

There's a little oil on the disc, but not much and I don't put the tuna on till it's smoking! 1.5-2 minutes a side depending on the thickness of the tuna steak. It shouldn't be as done inside as the ones above, should be more purple in the middle. It was still fall apart tender.

That concoction is something I whipped up last night, it wasn't bad but has room for improvement.

            1 can black beans drained/rinsed
            1 can corn drained rinsed
            1 can rotel drained rinsed
1 small can chopped green chilis drained rinsed
            1 handful cilantro chopped
1 bunch green onions chopped fine
            8oz sour cream
            big spoonful of mayo
            generous amounts of Ragin Blaze
            black pepper
            salt
            cayenne

Mix all ingredients together and apply to taco....hot sauce and cilantro on top.

I'm dying to get one of these so I can attempt some of these recipes. Tired of having to go down to my parents to use my dads. Y'all are some impressive chefs!

Well I've been busy doing retirement stuff but knocked out a good amount of "The Tank" for Bill M today. Minus the chain bracket for the tank and top side paint it's almost done.

Also Bill once you get it you need to take the casters apart, clean, and lube them.

Well, well look what I can roll around wherever I want. Picked this up today from Benny. He and DMo had me worried about the weight but handled it off the truck myself easily. Benny modified my stand to this design I had come up with, added the wheels and I got another disc. This one 22". The handle next to the propane tank works well. Thanks Benny!

I have a question for making hot wings. Do yall deep fry them, then pour out the oil and pour on the hot sauce? Or how do yall do them?

I want to make some this weekend, but not sure exactly how yall do it in the disc.
