              Puddle ducks! The rest go into gumbo. Spoonies.......well times are tough but not that tough. They get a pass in my spread unless I need some frozen training dummies to work the dog with in the off season.

                I've tried everything from brine to bacon wrapped and no matter what, it tastes like duck. No matter what kind, from mallard to teal and everything in between. Divers and geese included. It all tastes the same. Either you like it or you don't. I kill a bunch of them, and don't really like them. I'll eat them if I can't give them away, because I don't like to waste. But there are many, many other things I'd rather eat.

                  This always makes me laugh spoonies ARE puddle ducks and don't taste any worse than a gadwall or mallard.

                  If you overcook duck it tastes like crap, which is why people always say it tastes like gamey liver. I "age" my ducks in the fridge for 4-5 days making the meat super tender before I clean them, then soak in a brine to get all the blood out. I just marinade it and cook it med rare (more towards the rare) like a steak. I've made duck for plenty of people that though it was gross and changed their minds.
