                  I just had gumbo with redheads.

                  Favorite way to fix them

                  cut the breast fillet into 3 strips. Cajun Blaze and roll in flour- dip in eggs and go back to the flour. Fry in skillet but not too long. Cover with Tabasco and enjoy.

                            They all taste like liver of one degree or another. There are several ways to prepare them that make them edible. Rolled in bacon and jalapenos like dove, beaten battered and chicken fried, gumbo'd as mentioned and they actually make decent jerky.

                              They make excellent fajitas and stir fry. Just don't over cook. That's the key. Season em
                              Like a steak and grill em medium rare. Also I brine the breast overnight. Gets most of the blood out.
