    Soak your duck meat in salt water in the fridge for a night first. Biggest thing with duck meat is to get all the blood outta the meat you can.

      cut boneless breast meat into dove sized chunks.
      marinate in italian dressing,coke classic,worchestershire, garlic,tony's,blak pepper and habenaro pepper sauce. (preferably overnite)
      place sliced jalepeno on one side and a chunk of red onion on the other
      wrap in bacon
      cook over medium coals til bacon is done

        marinate the duck breasts overnight and slie in fajita like strips,take an equal amount of fajita skirt steak and cook med rare with onions and bell pepper...serve in warm tortillas along with pico de gallo and guac

        second variation same as above except dust the strips in flour/cornmeal or similar breading, add a can of Dole Pineapple chunks, red/green bell peppers, pearl onions, finish with a jar a Smuckers pineapple/peach preserves....serve over a bed of steamed rice....for a less sweetened version add white vinegar and lite soy sauce

          I had some BBQ'd one time at the lease that was basted in an orange juice based sauce. Anybody have something like that? It was the best duck Ive ever eaten.
