My experience with the tail wag is that you get a side-to-side wag when they've decided that things are OK and they go back to their routine--

Ears pointed forward you've either been seen or smelled.
When they start throwing their nose in the air they're trying to smell something better. Could be they got a small drift of your wind, could be he smells a hot doe.
Ears back = aggressive
Slow slinking as they come in, they've either been educated to you or caught a little of your wind.
Nose to the ground and stiff legged trot they're on a does trail. If you haven't seen a doe they should be responsive to calling.
Bristled up hair and ears back very responsive to calling.

An old mature doe will wait a long time before walking up to your corn to check things out. Her best friend will be across from her hidden and as soon as you move she blows like hell and scares the crap out of you then they run off! This will make you wonder sometimes who is hunting who!!
If a lone deer is within distance and never looks the same direction in between bites. It is about to get stuck because it has no idea you are there.
Dropping berries under your feeder while you watch them is the same thing as your buddy dumping a beer on your head! In either case dont let them do this.
