          Once seasoned, it's best to leave out at room temperature before cooking. If you're wanting to "marinade" it either wet or dry, it's best to do so and then wrap in saran wrap or cover the pan with saran wrap (or ziplock bag or vacuum sealer). It needs to be air tight...
          I will use a ziplock bag next time if I marinate over night. Lesson learned!

                No sir! Im not sweating the chops. I was just trying to figure out what happened. After a little research its very common with certain seasonings. You just dont use aluminum foil. Blake your seasoning is awsome! Please dont think I was knocking it. You have a customer for life

                            I have had raw and cooked food ruined by using foil to cover or wrap it in. Now I only use it while the food is cooking than the foil goes I'm the trash.
