There is no way to modify the setting. If you have the same tstat on the 5 yo house and it's acting differently then you probably have a different problem.
    1. Have you moved in and are running the system continuously?
    2. What temperature are you trying to maintain?
    3. Are you sure the fresh air intake is working correctly, not just what the AC guy says is correct?

I replaced this with a Honeywell Smart stat and it has 1 degree before it cycles back on. It runs way more than it did before. I have tried to find another stat with more than 1 degree and can't find one. I'm betting this is done on purpose to wear out the condensers early.

I'm betting your rent house has an older stat that has at least 2 degrees of temperature loss before it comes back on.
Smart settings typically have offset setting that can be changed. My Sensi has it. Same with humidity settings.

OP, something still doesn’t sound right and it doesn’t seem the t-stat is the cause after changing it out.

When I bought my 1st house years ago I called and AC tech out cause my AC would run all day. He said that's what you want. The high seer rating ones are more efficient running non stop and used the most electricity at start up so you don't want that. He said if it constantly turns on and off the unit is oversized for your house size. Fast forward to the last year. My parents had a new unit installed that was oversized and turns on for a few minutes then turns off. You can feel it getting hot inside before it turns back on. In result their electric bill skyrocketed after it was installed. That's just what I was told so don't hold me to it. You can also google how to tell if your home AC is oversized.
