For trout you just fillet the fish- Put a slit by the back bones enough to pinch. Grab and pull. All the rib bones come out complete. I’ll take a few picks next time I keep a few and post on here. When I was cutting them out I would often clip at least one fish too close and end up finding bones when eating.
Redfish were at the bottom of the keeping for eating scale before I learned about bleeding fish. And there is absolutely nothing wrong with sheephead fillets. One of the best in my opinion.

They don’t call’em saltwater carp for nuthin’, pass.
