        Our family favorite is to cook fajitas one night then make quesadillas the next night! I can make enough quesadillas for our family of 4 in about the same time it takes my wife to get the queso ready to go.

          For those worried about rust and upkeep, I bought one of these silicone mats last year and so far it seems to be working like a charm. I just clean and scrape the griddle after cooking, then add fresh oil before replacing the mat. It keeps water out of the equation, and I don't have to clean dust and bugs off before using the griddle each time.

              I use the same mat but got it to keep dust and dog hair off the griddle surface, it does help keep that last layer of oil from drying out which helps with rust.

                Nothing against one, just never understood the love, it’s just a hot plate or flat top, just another way to cook. I guess for camping they pretty handy but I have a gas grill for that, you can throw a piece of flat iron on it and have the best of both worlds

                      After getting my 36" blackstone, I kept my grill for another year or so, then finally took it to work and tossed it into the dumpster... Now if I had a big flat iron to put on top of my grill, I'd probably still be using it, but there's nothing I do on my blackstone that would be better done on a grill, and there's nothing I'd want to do on a grill that I cannot do on the blackstone, including "grilling" steaks and fish, especially fish.
