    TBH Blanco Sausage Build 2024

    Les, Trey, Michael and I got together Saturday with our families for our annual Sausage day. We pumped out around 300lbs. Pan, summer, fresh, and dried were all produced. I can't wait to see how the dried turns out.

    Nice!! What type of meat did you use? Deer, Elk, Antelope, Wild Hog, Armadillo?

          Mine was mostly axis and pork with some whitetail. Those of us that are hunters had mostly whitetail and pork with some axis. We had a couple non hunter batches that were all pork.

          I used Legs seasoning. I bought it off Amazon as a kit with casings. I used high temp cheddar cheese with some cubed cheddar Michael brought. For peppers I used hatch chilies my son brought me last summer from Las Cruces. I roasted, peeled, diced and dehydrated those. I did add encapsulated citric acid while mixing after grinding.

          I'm not sure there are many things more satisfying than killing, cleaning and turning wild game into delicious sausage.

            Ain't gonna lie...just seeing that sausage hanging to dry...holy moly... you better hope someone doesn't drive me by that shed! Will you smoke it some or just dry it?

              All of that got smoke after hanging. Some pulled for fresh the next day. Most will hang to dry a couple weeks.

                  Nice work ladies and gentlemen. The summer sausage looks gooooood!

                  Been awhile for us. Had such a hard time getting everybody together on the right weather weekend so I just gave up.
