If your only going to process like 20 or so pounds at a time, I would just use my grinder and mix it by hand. I think you'll find the extra clean up of a mixer will not be worth it.

We'd have to load, empty and reload that thing 8 times for 200lbs and 16 times for 400lbs of sausage.......
I'd have to see that added convenience in person before I buy. I'm going to stick with a small boat paddle and a 120 quart cooler for now....
