      1st of all Russ, contrary to popular belief; they are NOT rodents. They are their own species and a very fascinating critter. Actually their closest relative is a hippo! They are only found in TX, NZ, AZ and Mexico.

      They are a BLAST to bowhunt and are one of the most fun to spot and stalk.
      Properly field dressed, skinned and butchered, they are excellent to eat. I have cooked them many ways and have never had a bad meal. My favorite is to put a hind quarter in an XL Dutch Oven with sliced apples, peaches and grapes and a jug of apple cider, then slow cooked for about 6 hours.

      It will make you slap Yo Mama's Mama!

      As I say to you guys who think it is not as good as venison (and I LOVE venison; you just haven't had it done right yet!

          I'd try it, I'll try anything once, but I've never had the chance and I havent made any effort to either. Somethign about eating a giant rat that just has me looking for other protein.

                When we lived in south Texas (Mathis Tx) we eat them quit often they were dang tasty, wish we had them up here in central Texas

                  I would also be careful not to shoot too many of them as they only have a few babies a year unlike hogs that mutiply like crazy. We used to have them on our lease and shot 7 or 8 one year and now we rarely see them and I kind of miss the things.

                    Taste like poop! You'll notice that all the "bad" meat (Javvy, Aoudad, etc) that people claim is good has to be cooked long hours and/or HEAVILY seasoned with some special ingredients. There's a reason for this! You can over season and cook a rock for 10 hours and if you lick it will taste ok. Just sayin...
                    Anything that HAS to be soaked in milk or cooked with peaches and grapes OR has a gland with a foul smelling ooze
                    I'll pass on...

                            Calling a Javelina a rat is pretty silly in this day and age, it’s just too easy to do a Google search and learn that they are no more closely related to a rat than is a deer… They are both Ungulates http://www.ultimateungulate.com/WhatIsAnUngulate.html
